Once you’ve introduced your lovely and smooth purees of butternut squash and parsnip, to name a few, try to add in some herbs for a punch of flavor and nutrients. Add in a handful of fresh herbs to your puree just before going at it with your hand blender.
Here are a few to start with:
- Parsley is an excellent source of vitamins A, C, and K. It’s also a good source of iron and folate.
- Cilantro helps control blood sugar, cholesterol, and free radical production. It helps stimulate digestion and is an amazing source of vitamin A, as well as lutein, which is necessary for good vision. Cilantro also contains calcium and potassium.
- Basil is an excellent source of vitamin K and a very good source of iron, calcium, and vitamin A. In addition, basil is a good source of dietary fiber, manganese, magnesium, vitamin C, and potassium.
