When it comes to a new year, January usually involves a lot of fitness and healthy eating resolutions.

And though we're all for leading a healthier lifestyle, we don't want you to feel like you're missing out. So we've gathered a few comfort food recipes with a healthy twist. Try a Risotto recipe that's actually made with quinoa, a baked (instead of fried) Eggplant Parmesan with reduced cheese, a low-fat Vegetarian Pad Thai and a Berry Pie that's loaded with fruits, nuts and whole grains.
