A few weeks back, I was asked to bring dessert to a small get together. What did I bring? A store-bought cake that nobody touched and two pints of ice cream. I know. I could have done better. But it was a Sunday. And I was tired. And, well, I'm not exactly a whiz in the dessert department.
Too bad I didn't think to make this so-easy-you-can-make-it-while-tired-on-a-Sunday two ingredient chocolate mousse. Seriously. It only uses two ingredients and the whole process takes just a few minutes. Dress it up in small glass cups, add a scoop of whipped cream (bonus points if you whip it yourself) and, if you really want to wow them, sprinkle with some chocolate shavings and serve with a cookie.
Ingredients:
265 grams (9.35 ounces) good quality bittersweet chocolate (70% cocoa solids), coarsely chopped
1 cup water
optional:
2 cups, whipping cream and sugar to taste
chocolate for shavings
cookies
Directions:
1. Fill a large bowl with ice and water. Set a slightly larger bowl on top, so that the bottom of the top bowl touches the iced water.
2. In a medium-sized saucepan, combine chocolate and water and heat over medium heat, stirring until the chocolate is melted.
3. Pour the chocolate mixture into the top bowl. Whisk with a wire whisk or an electric hand-held mixer until thick.
4. Watch the texture as you whip, being careful not to over mix. Note: Whisking too much can cause the mousse to become grainy. If this happens, transfer the mixture back to the saucepan and reheat until half of the mixture is melted. Transfer back to bowl and whisk again briefly.
