After receiving Hello, Cupcake! for her birthday, Sweetspot.ca marketing coordinator Elise channels her inner Italian grandmother to whip up these spaghetti & meatball cupcakes for the rest of the staff! Mamma mia!
What you'll need:
1 cupcake mix
1 container buttercream icing
Yellow food colouring
About 1 cup strawberry jam
1 white chocolate bar
Ferrero Rocher chocolates (1 per cupcake)
Directions:
1. Bake cupcakes according to package directions and let cool.
2. Lightly ice cupcakes using buttercream icing (it's not as white as vanilla icing).
3. Add a few drops of yellow food colouring to remaining icing to give it a "pasta" colour.
4. Put remaining icing into a piping bag with a small round tip (or a sandwich bag, then cut off the corner).
5. Create "spaghetti" look on top of cupcakes by drizzling icing in a messy way.
6. Add a dollop of jam to top of cupcake.
7. Dip the Ferrero Rocher into the strawberry jam and place on top of cupcake.
8. Grate white chocolate overtop to create "Parmesan cheese".
Tip: Sugar-free jam has a more red colour so it's perfect for the "sauce" -- and it has fewer calories!
