Canada Day Cake

Sweetspot.ca’s very own baker extraordinaire Elise Tremblay treats us to a special red-and-white layer cake, perfect for Canada Day.

What you’ll need:
One box of white cake mix
One box of Red Velvet cake mix (or a white cake mix with red food colouring)
2 containers of white icing
Icing and a strawberry for garnish

Directions:

  1. Mix the batter according to the instructions on the boxes and bake in four round cake pans.
  2. Let each layer cool.
  3. Add icing to the first cake layer (white).
  4. Stack the second layer (red) on top.
  5. Add icing to the second layer and stack the third layer (white) on top (add icing to this one too).
  6. Stack the final cake layer (red) on top.
  7. With the icing, add piping in between the outer cake layers.
  8. Decorate the top of the cake with the remainder of the icing and add a strawberry in the centre for garnish.
