Healthy Comfort

low-cal subsitutionscanada (Aug.25.09)

We all know how to eat healthy; we give up the foods we love, and survive on lean proteins, vegetables and fruits. Since we'd rather not do that, we decided to find out if there's a way to enjoy all of our favourite foods minus the calories. Thankfully celebrity chef Sophie Michell told us she had some secrets to share.

I love having something sweet at the end of a meal but don’t want to risk the extra calories. Do you have any healthy dessert suggestions?

I love sweets too and getting something low-cal and delicious is easier than you think. All you have to do is use lower calorie substitutions for traditional high fat ingredients. My latest light dessert, Green Tea Pomegranate Crème Brulee, has double the protein and much less fat than traditional crème brulee because it uses five percent cream and two percent evaporated milk instead of heavy cream. If you’d like to try my recipe you'll find it posted at www.tetley.ca.

The morning after a night out always seems to involve a craving for greasy foods. Any options that will ease the pain without giving up on our healthy eating?

When it comes to foods that increase your energy, I like to have protein – poached eggs served on whole grain toast is a good option. Whole grain toast with a little light, herbed cream cheese along with some veggies like sliced avocado and tomato is delicious, nutritious, filling and much lighter on the calories.

Do you have any easy modifications we can make to our favourite comfort foods that will make them healthier but keep them tasty?

I look for substitutions:

  • Use low-fat yogurt and sour cream instead of cream.
  • Use olive oil to get good fats into your system.
  • Low-fat (or fat-free) cheese is great to cook with and has significantly less calories than regular cheese.
  • Avoid creamy drinks and cocktails and go for light options like soda water with citrus juices added.

Sophie Michell obtained her Advanced Chef Diploma from the Butler's Wharf Chef School. At age 19, she was nominated for the coveted Craft Guild of Chef’s Young Chef of the Year Award. After looking deeper into the nutritional side of food, she discovered a passion for healthy eating. Her appetite for healthy food and award-winning experience made her the perfect family chef for world-famous supermodel, Claudia Schiffer.
