I'm having the family over for Thanksgiving, and I'm nervous about cooking for a large group. Any tips or tricks?

Thanksgiving is upon us and the first word that comes to my mind is turkey. Many of us are intimidated by the thought of cooking a 10 to 20 pound bird, which is quite different from our traditional dinners! But once you have a few fool-proof techniques, the size won’t matter and it will always be moist  and perfectly-cooked.

I prefer to purchase a fresh turkey for the flavour, but frozen is fine if necessary. Just be sure to thaw it in your refrigerator, which will take about 48 hours for a 10 pound turkey. Naturally, there will be lots of leftovers, so toss them into your soups, stews, sandwiches and salads. If a turkey is too large for your family, try the boneless breast which is actually lower in calories and fat than chicken.

To get started, first figure out the number of guests you're having. If you're preparing a whole turkey, plan on having 1 to 1.5 pounds for each person.

1. Plan the menu in advance. Prepare any dishes that can be made ahead of time as well as any sauces, dips, etc.

2. Inquire about allergies.

3. Always have a chicken, fish or vegetarian option.

4. Whether you're hosting a large or small party, ask for help if you think you’ll need it. We all have lots of obligations to work, family and friends, so ask in advance to be respectful of other people’s time. You can also hire help.

5. Serve healthy fare that is devoid of heavy sauces and lighter in calories and fat. For your party, create a menu that is easy on your guests’ tummies and their waist lines. When you mention at the party that the menu is lighter and healthier, your guests will feel less guilty about eating your creations.

6. Don’t serve on plastic cups, plates or cutlery. Proper tableware signals that you value your guests.

7. Set the table ahead of your guests’ arrival.

8. Try and make a seating chart to encourage great conversation.

If you are hosting a large party, hire a service that provides linens, tableware and wait staff. You also have an option of catering your event, regardless of the size of your party.
