Like a bolt of chipolte coursing through a piping hot dish of jambalaya, our favourite celebrity chef has spiced up our dishes and our hearts for over a decade.
We've been long-time fans of his cooking shows, avid devourers of his cookbooks (and the recipes they yield), and now, we're enthusiastic users of his cookware collection, Emerilware™, available through The Shopping Channel.
We caught up with the Creole master on his latest trip to Toronto to ask him a few questions about his favourite things.
What assortment of pots and pans do you think are essential for the home kitchen?
I always have a sauté pan, a sauce pot, stock pot, definitely an all-purpose pan and a skillet.
Are there any cooking tools, utensils or gadgets that you absolutely love?
I really only keep around what I use, right now I'm totally into my pie maker in terms of gadgets.
What are your top pantry essentials to always have on hand?
Salt and pepper, olive oil , 10 or 12 inch hard-anodized pans and a selection of essences and cumin.
What's your ideal romantic menu to cook for a date night in?
Chicken stir-fry.
What would you eat for your last meal on earth?
Well, it would have to be a selection of many things: Gumbo, Pasta with truffle oil, double-cut pork chops and banana cream pie.
How was it working on Top Chef?
It was great. There's no pretension. It's the real deal. These young folks are cooking their brains out, and they're on the spot.
