How to Make Movie Theatre Popcorn at Home

One of my favourite guilty indulgences is movie theatre popcorn. Oh, I know what they say. It's terrible for you. More fat than a big mac, more sodium than a salt lick, and a bag costs a small fortune. 

But the truth is that since my daughter was born, getting out to a movie is such a rare occurrence that I always make sure to nosh on a small bag when I get the chance. What can I say? It just doesn't feel like going to the movies without it..

The rest of the time, I make my own movie theatre style popcorn at home. No, this doesn't involve anyone named Mr. Redenbacher, anything in a "Jiffy" or even an air popper. I make it the old fashioned way — stove top, in a pot,  with a sprinkle of sea salt for good measure.

It's healthier than your local cineplex's version, but delivers that punch of creaminess and salt in each addictive bite.


You'll Need:
1/2 cup of popcorn 
2-3 tablespoons of coconut oil
Large Flake salt or sea salt to taste
Melted butter (optionals)
Oven mitts
Pot with Handles

Directions:
1. Heat the coconut oil over medium-high heat in a large pot. Make sure the pot is light enough to pick up — you'll need to shake the popcorn around!
2. Place three kernels of popcorn in the pot. These are your test kernels. Return the lid to the pot and wait until all three have popped. The oil is now hot enough for the rest of your popcorn.
3. Add the popcorn to the pot so it covers the bottom in an even layer. Replace the lid and wait for 10-15 seconds. With oven mitts on, pick up the entire pot by its handles and shake vigourously. Return the pot to the element and wait for another 20 seconds. Shake again. Repeat until the sound of the popcorn popping slows and remove from heat immediately.
4. Transfer popcorn into a large bowl and sprinkle with salt. 
5. If you're feeling particularly indulgent, add some melted butter. The coconut oil does make the popcorn fairly rich on its own, although true butter buffs probably lust after a drizzle of liquid gold.
