The Nanaimo Mountain Madness Sundae
From the city that brought you bathtub racing comes one the most-loved Canadian treats. Add ice cream and chocolate sauce, and you’ve got the perfect summer version of the B.C. bar.
1 homemade or store bought brownie (2” x 3”, split horizontally)
1 scoop (1/2 cup / 125mL) vanilla or mint ice cream, softened, divided
1 tbsp. (15mL) chocolate topping
Sprinkles, optional
2 tbsp. (30mL) chocolate syrup
1 tbsp (15mL) toasted coconut, optional
Place bottom half of brownie on dessert plate. Top with ½ scoop of ice cream. Top with remaining brownie half. Place another 1/2 ice cream scoop on top, drizzle with chocolate topping. When magic shell is firm, drizzle with chocolate sundae syrup and garnish plate with toasted coconut.
