Ingredients
10–12 slices whole wheat bread, cut into 1/2-inch (1 cm) cubes
4 strips bacon, diced
1 medium onion, finely chopped
2 celery ribs, finely chopped
1 large red apple, cored and cut into small cubes
1-1/2 cups chicken or turkey stock
2 tsp dried crumbled sage
Salt and freshly ground black pepper to taste
2 Tbsp butter, softened
Directions
1. Place the bread cubes in a large bowl. Fry the bacon until crispy in a large skillet over medium to medium-high heat. Add the onion, celery and apple and cook five minutes more, or until tender.
2. Spoon the mixture over the bread cubes. Add the stock, sage, salt and pepper and toss to combine. Coat a 9- × 13-inch (3.5 L) baking dish with the butter. Spoon the dressing into the baking dish and cover with foil.
3. Preheat the oven to 375°F (190°C). Bake the dressing for 20 minutes. Uncover and bake 15 minutes more, or until the dressing is hot and crisp and golden on top.
Eric’s Options: The dressing can be made oven-ready several hours in advance. After spooning into the baking dish, cool to room temperature, then refrigerate. Pop the stuffing in the oven the moment the turkey is done.
