For an ultra-decadent twist, microwave 1/2 cup of maple syrup on medium heat for 30-45 seconds; drizzle over sweet potatoes while still warm.
Ingredients:
4 large sweet potatoes
1/4 lb softened unsalted butter
3 tbsp brown sugar
3 green onions, thinly sliced
Salt and freshly ground black pepper
Directions
1. Preheat grill to medium (about 350°). Place sweet potatoes on top rack of grill, close lid and roast for 45-60 minutes, or until flesh is soft all the way through when pierced with a fork.
2. Remove sweet potatoes from grill and let cool slightly. Carefully remove skin, ensuring that no charred bits remain stuck to the sweet potatoes. Place potatoes in a large bowl and smash with a spoon until mixture resembles a chunky mash. Add butter, brown sugar and green onions; mix gently to combine. Season sweet potato mixture with salt and pepper to taste and serve immediately with extra butter and warm syrup for drizzling.
