Oh so impressive in presentation, your guests will love this light and refreshing bite.
Ingredients
3 plum tomatoes, seeded and chopped
8 Kalamata olives, finely chopped (about 2 tablespoons)
2 teaspoons finely chopped oregano
Juice of 1/2 lemon
1 teaspoon extra virgin olive oil
1/4 teaspoon freshly ground black pepper
3 ounces feta, cut or crumbled into 12 bite-sized pieces
Directions
1. Combine the tomatoes, olives, oregano, lemon juice, olive oil, and pepper in a bowl. Toss well, then divide among 12 Chinese soup spoons. Top each with a piece of feta and serve.
Chef’s Note: If you’re not serving this Greek-inspired vegetarian option immediately, add the olives at the last minute to avoid discolouring the tomatoes.
