The perfect start everyday and so pretty for brunch entertaining.
Ingredients
2 cups large rolled oats
1/2 cup slivered almonds
1/4 cup sunflower (or pumpkin seeds)
1 cup shredded sweetened coconut
1/2 dried cranberries (or other dried fruit)
4 tbsp butter melted with 6 tbsp honey
Grated rind of 1 orange
1 cup mixed berries
1 cup plain yogurt
Directions
1. Preheat oven to 350F.
2. Combine oats, almonds, sunflower seeds, coconut and dried cranberries. Add orange rind to butter-honey mixture and pour over dry ingredients. Spread on baking sheet and bake for 15-20 minutes until golden.
3. To make parfaits, in a wine or martini glass layer mixed berries, top with yogurt and add granola. Repeat. Top with a drizzle of honey or sprig of mint.
