My favourite pasta is spaghetti, and when I add olives and feta cheese, I have a truly European dinner.
Ingredients
1 lb (500 g) spaghetti
2 tbsp (30 mL) olive oil
2 cloves garlic, chopped
1 small green bell pepper, chopped
1 small red onion, chopped
1/2 cup (125 mL) black olives, sliced
1/2 cup (125 mL) vegetable or chicken stock
1/2 cup (125 mL) white cooking wine
2 tbsp (30 mL) lemon juice
1/2 tsp (2 mL) dried basil
1/2 tsp (2 mL) dried rosemary
1/2 tsp (2 mL) sea salt
1/2 tsp (2 mL) ground black pepper
1/2 cup (125 mL) crumbled feta cheese
Directions
1. Bring a large pot of salted water to a boil. Cook the pasta for 8–10 minutes, or until al dente. While the pasta is cooking, heat the oil in a large saucepan.
2. Sauté the garlic, green bell pepper, and onion for about 2 minutes. Add all the remaining ingredients, except the feta cheese. Sauté for about 5–6 minutes.
3. Drain the pasta. Mix it into the sauce. Stir the feta cheese into the pasta. Serve immediately.
