Bok choy is one of the most delicate vegetables you can use in a stir-fry. When you combine it with oranges, it brings a new taste to a traditional Asian dish found in many fine restaurants. This homemade dish at just over $4.00 for two people is every bit as good.
Ingredients
3 Tbsp (45 mL) olive oil
1 small onion, sliced
2 cloves of garlic, chopped
1 red bell pepper, sliced
1 orange, peeled and sliced
1-1/2 lb (750 g) bok choy (about 6 small), halved
1/4 cup (60 mL) hoisin sauce
1/2 cup (125 mL) orange juice
1 tsp (5 mL) orange zest
2 Tbsp (30 mL) soy sauce
2 Tbsp (30 mL) liquid honey
1 tsp (5 mL) dried tarragon
1/2 cup (125 mL) green onions, chopped
Directions
1. Heat the oil in a wok or large sauté pan over high heat. Add the onion, garlic, bell pepper, and orange and sauté for 2–3 minutes. Add the bok choy and sauté about 4–5 minutes more.
2. Mix the hoisin, orange juice, orange zest, soy sauce, and liquid honey in a bowl. Make a hole in the centre of the bok choy mixture and pour in the wet mixture. Continue to sauté, mixing well, for 2–3 minutes. Add the tarragon and sauté another 2 minutes.
3. Sprinkle the green onion on the bok choy and serve.
