Serves 4

Ingredients
8 wooden skewers, soaked in water 10 minutes
4 chicken breasts, cut into cubes
1 ½ tbsp (30 mL) Mediterranean Rub
Directions
1. Rub Mediterranean Rub over cubed chicken. Assemble onto skewers (not too tightly packed). Can be assembled the night before.
* Vegetarian option: cube an assortment of vegetables like zucchini, peppers and onion and alternate on skewers. Coat skewers with olive oil and dry rub and grill or cook under broiler.
2. Grill on BBQ or under broiler about 6 -10 minutes each side.
