When you think of Coolio, do you think rapper – or chef?
He’s known for hits like Gangster’s Paradise, but did you know he also has his own cookbook? I’ve wanted to check out Cookin’ with Coolio ever since I first heard about it (as a prize in a FoodieMeet Bakeoff). The book is totally infused with his personality and peppered with colourful language. Even if you don’t try any of the recipes, the book is an entertaining read.
I decided to make Coolio’s Strawberry Fields Banana Muffins Forever. The muffins were easy to throw together (no hand-mixer required!). The only change I would make? Melt the butter instead of using it softened; this will make mixing even easier.
The true test was bringing these muffins to the sweetspot.ca headquarters so everyone could taste them. It turns out Coolio knows his stuff. The treats were gone in a flash and the recipe was declared a success.
Strawberry Fields Banana Muffins Forever
A few drops olive oil
½ stick unsalted butter, softened*
½ cup milk
1 large egg
1 ¾ cups all-purpose flour
½ teaspoon salt
2 teaspoons baking powder
¾ cup sugar
1 cup chopped strawberries
1 banana, thinly sliced
A regular old muffin tin
*Monica’s note: melted butter will work too and is preferable.
- Preheat your oven to 375 degrees Farenheit.
- Use a few drops of olive oil to grease up a muffin tin.
- Combine the butter, milk, and egg in a small bowl and beat it lightly.
- In a larger bowl, pour your flour, salt, baking powder, and sugar and gently mix it.
- Toss in the chopped strawberries and sliced banana, then stir to coat with the flour mixture.
- Pour in your milk mixture and stir it all up together.
- Fill up the muffin cups with your batter, then place in the oven and bake for 25 to 30 minutes.
- Let them cool down for 10 minutes, then remove from the pan and serve these bad boys up.
