4 lettuce leaves
2 slices aged Swiss cheese, cut diagonally
8 slices round goat cheese (120 g)

Directions:
1. Sautee diced shallot in a small amount olive oil in non-stick pan and cook about 3 minutes. Add minced pepper, seeds removed. Stir in frozen wild blueberries, balsamic vinegar, orange and lemon juice. Let simmer while stirring for about 3 minutes. Turn up heat and reduce until liquid reaches a syrup-like consistency.
