Savoury Sweet-and-Sour Red Cabbage
We've been working our way through Williams-Sonoma's The New Slow Cooker this winter. This week, our menu started with a recipe for Sweet-and-Sour Red Cabbage. From there, it seemed natural to cook Schnitzel and Spätzle along with it.
This recipe for Sweet-and-Sour Red Cabbage is simple, especially if you have a food processor.
Start by shredding a small red cabbage and put it in the slow cooker with 1/3 cup of honey, ½ cup of sherry vinegar or red wine vinegar, 3 whole cloves (or a few pinches of ground cloves), and ¼ tsp of salt. Set the slow cooker on low for four hours.
When the cabbage is almost ready, sauté over medium-high heat 3 diced apples (the recipe uses tart green apples, but we used red) in a tablespoon of unsalted butter and a tablespoon of oil until they start to brown (about eight minutes).
Add 2 tablespoons of water, turn the heat to low, and continue to cook for about 5 minutes. Add the apples to the cabbage and serve.
