2-4 medium skinless boneless chicken breasts, seasoned with sea salt and black pepper
2 medium sweet potatoes, peeled and sliced into rounds ½ cm thick
2 tbsp olive oil
2 garlic cloves, crushed with garlic press or finely chopped
¼ cup grated parmesan or pecorino cheese
Put sliced sweet potatoes in a large bowl and add in oil, garlic and cheese. Toss to coat. Spread sweet potato evenly onto a baking tray lined with parchment and place seasoned chicken breasts on top. Bake for 20-25 minutes at 375°F/190°C until chicken is cooked and sweet potatoes are tender. Serve with steamed green beans.
