Ingredients
4 thick slices of white bread, crusts removed
1/2 cup (120ml) milk
1 egg
2 tbsp sugar (Chef's Note: I used vanilla-scented sugar.)
1 tbsp butter
1 tsp ground cinnamon
Toasted pecans, to garnish
100 ml maple syrup or honey, to serve
Directions
1. Cut each slice of bread in half to make rectangles. Beat the egg, 1 tbsp sugar and cinnamon in a bowl, then add the milk and combine well.
2. Melt butter in non-stick frying pan over medium heat.
3. Dip the bread into the milk mixture covering both sides. Sprinkle one side of each piece of bread with some of the remaining sugar and gently fry sugar-side down for 3 minutes or until the undersides are golden. Sprinkle the tops with a little sugar and flip. Cook until golden.
4. Garnish with maple syrup or honey and a sprinkle of pecans. Serve with yogurt and fresh fruit.
