This is such a delicious and easy-to-fix sandwich—the pesto and warm melted cheese make it unforgettable. We like it made with the breast meat from a rotisserie chicken from our local market; you can roast your own if you prefer. Just tear the meat within to bite size pieces with your fingers.
Ingredients
4 hoagie rolls (hero rolls)
1/2 cup basil pesto
2 cups shredded rotisserie chicken breast meat
8 thin slices provolone cheese
Directions:
1. Heat the broiler. Separate the rolls and arrange the halves on a baking sheet. Spread pesto on each half, dividing equally. Divide the chicken among 4 of the halves; top with 2 slices of the cheese.
2. Place under the broiler, 4 to 6 inches from the heat source, until the cheese is melted—1 to 2 minutes. Put the 2 halves of each sandwich together and serve warm.
