I don’t know about you but I'm always looking for easy but impressive appetizers to serve at parties and to bring to friends’ houses. This past weekend I was invited to a girls’ night and tasked with bringing something for everyone to munch on as the cocktails flowed. I thought it was the perfect assignment for this post since I’ve covered main course and dessert but no starters as of yet.
I turned to one of the older cookbooks in my library for inspiration, More than Salt & Pepper by Caren McSherry, and I do believe I have discovered a recipe that is going to be a last-minute hostess saver for us all. I made Baby Artichoke & Bresaola. I know what you’re thinking but trust me.
This was a delicious recipe featuring avocado butter (pureed garlic, sun-dried tomatoes, olive oil, honey Dijon mustard and avocado), topped with baby artichokes (or in my case cut up artichoke hearts) and salami (bresaola was no where to be found). And it was super easy to make, especially since I had the help of my sister this week.
So where is the lifesaver in all of this? Well, it’s in the foundation of the recipe, in this case the adorable and beyond simple to make toasted bread cups. We simply took slices of bread, flattened them using a rolling pin and cut them into 2.5 inch circles using a cookie cutter. Then we brushed both sides of the circles with olive oil, pressed them into a tartlet pan and popped them into a 375 degree oven until browned (about 10 minutes). It was almost effortless and the cups turned out perfectly.
I know these are going to be a go-to entertaining staple for me. I can make the toasted cups in no time flat and then use differently fillings to keep my appetizers original. Melted brie with pear or cantaloupe comes to mind, or perhaps a cream cheese and salsa mix. Chutneys are always nice at this time of year. Or maybe I could fill the uncooked cups with eggs then bake and have mini-quiches for a brunch.
The possibilities are endless! You must forgive me but I can’t wait for the holiday season now.
