I know it still feels a little early to be thinking about the holidays for some of you but in my world we’ve been working on holiday content for so long now that it feels like the 25th is just around the corner (don’t worry you actually still have 31 days). At the first early mention of Christmas (usually September in my business) I’m not ready to hear it but now I’m starting to get into the spirit and am kind of grateful to work in an industry that really stretches out this happy time of year.
Since I’ve been feeling so festive, I decided to get a head start on my holiday making and baking. The first recipe on my To-Do List was Spicy Mixed Nuts. Perfect for giving as a hostess gift (put them in a pretty jar garnished with a card that includes the recipe) or for serving as a snack throughout the holidays; this recipe is super easy to make and guaranteed to earn you accolades.
All you have to do is whisk together one egg white, sugar, salt, cinnamon, cumin and cayenne pepper then add cashews, pecans and almonds and mix thoroughly. Next you spread the mixture onto a cookie sheet and bake at 250°F for 40 minutes, then reduce heat to 200°F and bake for another 30 minutes.
Once the nuts are cool, store them in an air tight container. They can be kept for up to two months (they will never last that long). Truth be told, T. and I did serve some at a dinner party but otherwise we’ve been snacking away on them at home. They’re delicious!
Speaking of truth, I feel compelled to make a confession. I actually had nothing to do with this week’s recipe. T. made the Spicy Mixed Nuts all by himself and even he (a self professed beginner cook) gave them a two thumbs up rating of easy – which is great news since he’s going to need to make more.
