Fibre-licious

Now that 2010 is in full swing and my kitchen's complete, I'm very excited to get back to recipe testing. For my inaugural test of the year I decided to take Leesee91's suggestion from last week and I made some delicious whole grain muffins. Breakfast Muffins from Best Health magazine to be completely accurate. I figured now's a good time to feature something healthy for those of you still hanging on to your diet resolutions.

In terms of ingredients, I had most of the items required already on hand. Wheat germ and an orange were the only exceptions and they were easy to find at my local supermarket. As far as baking goes, the steps were super simple. Once I tied on my new fancy apron from Athropologie (a Christmas gift from T.) I was ready to measure, mix and stir.  

In less than the prescribed 15 minutes prep time I whipped up a hearty and delicious smelling batter. It was in fact so easy that I think the next time I make these I'll do it on the morning so T. and I can enjoy them warm from the oven (they can bake while I get ready for work). There's nothing I love more than starting the day with something fresh from the oven.

As far as taste goes, the muffins got a triple "mmm" rating from me, T. and his best friend. Not bland in the least (often the downfall of healthy muffins), we really enjoyed the raisins and hint of orange. T. declared they would be delicious served with yogurt and fruit. I'm planning to bring the leftovers into the office tomorrow (today by the time you read this), so hopefully you'll see some more taste test feedback in the comments below.
