I feel for people living with allergies. I can’t imagine what it would be like to have to watch my diet closely (never mind that I have zero discipline). Thankfully allergies are not a reality I have to deal with in my day-to-day life, that said when entertaining I do like to have some go-to recipes so I can accommodate them.
A gluten allergy can be an especially tough one when it comes to dessert. Enter Donna Hay (love her!) and her amazing Flourless Chocolate Cake. It’s seriously so good you’ll even make it when your friends with gluten allergies aren’t coming over.

Reasons I love it:
The flavour: It’s made with real dark chocolate making it so rich and dense that you can probably serve more than the suggested 12 people with this cake. Even the most intense chocolate lover will only need a small slice to satisfy their sweet tooth.
Only 6 ingredients: As you all know I’m about less is more when it comes to recipes, so a 6-ingredient cake really appeals to me. It was also easy to make with only five steps.
It’s not supposed to look perfect: While I love pretty desserts, I must admit they are not my specialty. I can make most things taste good but my presentation can often use work. This cake is not meant to bake up perfectly or to be iced evenly. Just add a dollop of whip cream and you’re done.
Adaptable: In an effort to make it even more allergy-friendly I swapped out the hazelnut liqueur for chocolate-flavoured syrup and the nuts for coconut. My guests said the cake reminded them of macaroons. Yum!
If I was to offer any advice, it would just be not to panic when the cake appears a little liquidy after baking for 40 minutes. Since the idea is to serve it chilled, it thickens up and hardens in the fridge. That being said I confess I baked mine for an extra 10 minutes just in case.
