We’ve grown out of the meat markets of our youth – bidding adieu to bad neon lights and guys who think “let’s do shots, baby” is a form of wooing.

We’re into a new kind of meat market: One filled with things that are healthy (and not likely to hiccup while trying to look down our shirts). Which is why we’re counting down the minutes to this weekend’s grand opening of a retail shop at the ranch of the Canadian Rocky Mountain Resorts. Following their philosophy of using high-quality, local ingredients whenever possible, they raise hormone- and antibiotic-free elk and bison – the exact same game that we’ve come to know and love at CMR-owned restaurants Cilantro, Velvet, The Ranche and Divino Wine & Cheese.
Starting May 17, the shop will be open every Saturday from 9 a.m. to 3 p.m. on the grounds of the CMR ranch, located just outside Calgary. The herds are grazed on native grasses and raised in open conditions that encourage natural social behaviors, which makes the selection of steaks, ribs and sausage uniquely delicious. And here’s the clincher: Game meats cook just like beef, but with much less fat.
Tasty, healthy and no risk of a hangover? That’s our kind of market.
