Here’s our recipe for Grilled Chicken Mediterranean Style made with farmer Serge Bourcier’s to-die-for lemon confits (250ml, $5). Grilled Chicken Mediterranean Style
Serves 2
1 tablespoon extra virgin olive oil
1 tsp minced garlic
1 small Spanish onion, diced
400 grams free range chicken breast, cut into bite size pieces
1 tablespoon lemon confits juice
4 large Portobello mushrooms, sliced
6 twigs fresh thyme
Sea salt to taste
Freshly ground black pepper to taste
In a frying pan, sauté over medium high heat, the olive oil, garlic and onion until slightly translucent.
Add the chicken and lemon confit juice. Continue to cook for 5-6 minutes, stirring occasionally.
Add the Portobello mushrooms, salt and pepper to taste.
Remove the leaves from the thyme twigs and add 2 minutes before serving. Toss.
Serve over mixed greens & enjoy!
