Tomato Basil Soup

Enjoy the warm flavour of this no-fuss, low-calorie homemade tomato soup with a slice of whole grain bread and feel satisfied (and stay healthy!) at the same time.

Ingredients
| 1 tbsp/15 mL |
butter |
| ½ cup/125 mL |
diced onion |
| ½ cup/125 mL |
diced celery |
| 1 tbsp |
flour |
| 2 cups |
low-sodium chicken broth |
| 2 cans (each 28oz/796 mL) |
crushed tomatoes |
| 2 tbsp |
chopped fresh basil |
| ½ tsp/2 mL |
salt |
| ½ tsp/2 mL |
pepper |
Directions
- Melt butter in a nonstick skillet over medium-high heat. Sauté onion and celery until tender (about 3 minutes).
- Add flour and continue to cook, stirring, for 1 minute.
- Slowly pour in chicken broth and whisk until completely blended.
- Empty crushed tomatoes into 4-quart (3.75 L) pot.
- Add contents of skillet along with basil, salt, and pepper.
- Bring to a boil, reduce heat, and simmer for 20 minutes.
- Allow to cool and purée in blender to create a smooth texture.
- Reheat and serve.
