The Society indulged their inner foodie and gathered at the cosy Corktown resto, Gilead Café + Bistro to get schooled in the art of canning & pickling by none other than Toronto hometown hero, Jamie Kennedy. Upon entering, guests were given a designation to the “sweet” or “savoury” team. Those on the sweet team would later produce some mouth watering preserved plums in brandy – a perfect accompaniment to some vanilla ice cream! The savoury team worked with the grill to roast fresh red peppers and herbs to create a delicious roasted red pepper preserve to be enjoyed with pasta or sandwiches anytime.
Following the kitchen duties, guests sat down to a well deserved feast of roasted squash soup and galantine of organic chicken with a Heineken and onion sauce. Ample bottles of Perrier and Heineken were on hand to complement the evening’s dishes. The meal rounded out to an indulgent end as guests enjoyed a chocolate mousse in a vanilla cone with raspberry puree – pure indulgent heaven!
Although a fantastic time was had by all, the most important part of the evening was the take away message that Chef Kennedy has built a career on – eating locally and supporting sustainability. For over 30 years, his culinary talents have astounded and impressed countless individuals’ fortunate enough to have entered one of his establishments. Throughout his success, he continues to be praised for his sustainable, environmentally conscious and ethical business practice, which culminated in Jamie’s receipt of the Order of Canada earlier this summer.
We are thrilled to have shared an evening of cooking with the talented chef himself and have walked away from the experience with a whole new appreciation for the foods we eat and where they come from!
