I’m a busy working mom. Every night, I come home at six and frantically try to get dinner on the table. What are some quick meal suggestions to prevent chaos at the end of the day?
Judy N. e-mailed us at expert@sweetspot.ca; and our nutrition expert, Annabel Karmel, answered;
I would cook several meals on the weekend and freeze them so that when you come home from work all you need to do is defrost and reheat a tasty home-prepared meal.
You can make up a batch of chicken balls with tomato sauce, defrost these, cook some pasta and serve chicken or meatballs with spaghetti and tomato sauce. I always think pasta is best cooked fresh. Stir fries tend to be quick and easy to prepare, and if you add a dash of teriyaki sauce and noodles to a chicken or beef stir fry it’s easy to make a popular family supper that everyone will enjoy.
