The author of 17 light eating cookbooks, Rose Reisman has been enlightening us that eating healthy can be a mouthwatering experience since 1988. We recently had lunch with her at her new restaurant GLOW Fresh Grill and Wine Bar and could not get enough of her waist-conscious -- and extremely delicious -- recipes.
Tired of our daily dinner scramble, we asked Rose for quick and healthy ideas (with the caveat that our family had to eat it too). Here she shows us how to assemble her signature Glow Salad with a Maple Dressing that's hard to resist.
Glow Salad
Ingredients
6 cups mixed greens
3/4 cup teardrop tomatoes
1/2 cup thinly sliced red bell pepper
1/2 cup raspberries or blueberries
1/2 cup diced avocado
2 tbsp toasted sun flower seeds
Maple Dressing
1 tsp minced garlic
1/2 tsp Dijon mustard
1 tbsp apple cider vinegar
1-1/2 tbsp maple syrup
2 tbsp olive oil
2 tsp lemon juice
Salt and pepper
Directions
1. In large serving bowl combine ingredients for salad
2. Combine ingredients for dressing and pour over top of salad. Toss well.
Serves 2 as main dish, 4 as appetizer
